Chicken Vegetable Panini

One of our favorite creations at dinner time is our Chicken and Vegetable Panini. We love using our panini maker since it makes the perfect sandwiches with the right crispiness and melts everything perfectly! Not only does it taste delicious but it is good for you! It has all the important food groups including grains, protein, vegetables and dairy. You could even have fruit with serving it as a side! 🙂

We begin the recipe by preheating the oven to 350 degrees. Allow the chicken breast to sit out for about 30 minutes to get to room temperature. I prepare it with our favorite seasonings that include Greek seasoning (one of my favorites that my parents used as a kid) and pepper. Cook in the oven for about 30 to 45 minutes and then let it rest and cool.

While the chicken is cooling- I chop up lettuce, tomatoes and mozzarella cheese. You could use any other vegetables that you enjoy- I think bell peppers or spinach would be really good too. Any kind of cheese works- we prefer mozzarella, but we have used sharp cheddar that was really good too. Once the chicken is cooled, I cut it up into slices. Prepping the bread can also be helpful, we usually use 12 grain bread and then drizzle on some olive oil, but you could use ciabatta (that would be delicious!) or any other kind that you prefer.

Once the  panini maker is preheated- begin by placing once piece of bread with olive oil down, then layer 2 slices of cheese, then add the lettuce and tomatoes, then shred the pieces of chicken, then layer the last 2 pieces of cheese and place on top the last piece of bread with olive oil. Slowly and gently press your panini maker down and allow to cook for a few minutes to the desired doneness.

Lastly, take a spatula turner and remove the sandwich onto a plate. Allow to cool for a minute or so, then cut into pieces and enjoy!
