Pulled BBQ Chicken

Looking for a quick and easy dinner to cook up without much hassle- my Pulled BBQ Chicken sandwich is the way to go! Lots of great protein along with the tangy barbeque sauce and who doesn’t love ciabatta bread?! You could even bring this to a potluck party and keep the meat warm in the crockpot orΒ  make it on small ciabatta buns for a game day party πŸ™‚

I begin the recipe by cooking a chicken breast in the oven seasoning with Greek seasoning and ground black pepper. Note: This recipe makes enough chicken for 2 large ciabatta buns, but if you have more people you can cook more chicken breasts or even buy the smaller ciabatta buns to allow the meat to go further.

Once the chicken cools- slice the chicken into pieces and then pull the meat with your hands. I put the chicken in a stove pot as I shred. Then pour your favorite barbeque sauce in the pot with the chicken- we love Sweet Baby Rays Original. Then mix the chicken and barbeque sauce together until the chicken is coated.

While the chicken is cooking over the stove on medium heat. I preheat the oven to 350 degrees. Then take the desired amount of ciabatta buns place on a cookie sheet and drizzle on olive oil. Place in the oven for a few minutes till they are heated up.

Lastly assemble the sandwich by placing a scoop of chicken on the ciabatta bun and top with a little more black ground pepper πŸ™‚
