Potato Lovers Casserole

One of our favorite potato dishes is our Twice Baked Potato Casserole! We love having this as a week night dinner along with a side of veggies or even having it as a side with a protein and veggie- either way if you love potatoes you will love this dish! 🙂 This dish is really great because its very versatile so you can add any other ingredients that you want.

We begin by peeling and chopping potatoes into fours along with putting them into a pot with cold water. You can use as many potatoes as you want- this time we used a few extra potatoes so it filled the pan a little more. I would say about 9 potatoes give and take the sizes we had some big and little ones. Then cook those over the stove on high heat until you can cut through the potatoes with a fork or knife.

After the potatoes are done cooking drain the water and place the potatoes in a large bowl. From there add 2 teaspoons of minced garlic (I have the one that is in olive oil) and a good amount of ground black pepper. As for the garlic it can very 1 to 2 teaspoons- I used 2 due to having more potatoes. Then mash it all together.

Then add in 1 8 ounce block of cream cheese and mash that well. Next add in sour cream- I used about 3/4 of a container. Then add a little bit of milk (we use skim). Mash it all together at this point it should be a smooth consistency.

Next chop up your favorite cheese into small pieces (we love sharp cheddar). Add that to the mixture to make sure it is throughout. Spray a 9×9 pan with non stick cooking spray and pour the potato mixture in. Then I chop up a few slices to place on top along with some more ground black pepper. Next place into a 375 degree oven and bake for about 25 to 30 minutes or until nice and golden brown 🙂

Lastly, cut into squares and serve it up! 🙂 Makes a lot of great meals throughout the week and reheats well 🙂 You could even add bacon or broccoli to it as well that would be super good! Hope you enjoy this creamy cheesy potato dish as much as we are this week 🙂
